Ditch the Dull Steak Knife: A Folder Built for Better Bites
Consider taking the impressive Civivi Hid to a restaurant for a real-world cutting treat.
On this week’s Mid-Week Supplemental Podcast (releasing this coming Wednesday), I’m featuring Great EDC Steak Knives.
I’m talking about great folders to have when you find yourself at a restaurant with a steak or chop (or, frankly, anything else) that you don't want to cut with the damp-handled, dull, and loose serrated blade they serve it with.
This category of knives generally carries well in a pocket and have slender 3.5" blades or better, with flat grinds out of a tough steel that won’t dull immediately upon contact with a ceramic plate.
Then something new came into my folder collection, more of a folding food prep knife or even... a vegetable cleaver(?).
The new Civivi Hid, designed by one of my favorite Polish knife designers, Ostap Hel, was recently sent to me, and, man, has it impressed me.
It’s got a broad 4.12" long sheepsfoot blade of 14C28N, with a fuller, thumb stud, and copious jimping, all housed within a 5.4" G10 liner lock handle. The slightly curved edge sits below the knuckle line and is angled so that this pocket folder would be perfect for use on a cutting board.
There is only G10 on the show side of the knife (no steel liner), which keeps the weight down, and with its blaze orange color, it makes it hard to lose if dropped -- ideal as a camping food prep knife.
I am tempted to bring this light and nimble beast out to the next restaurant we patronize, not just to try it out in the real world, but to see what kind of looks I get from the staff, as this folder seems like it'd be at home in the “back of the house.”
As I say a lot, Civivi and its entry-level brand, Sencut, take chances with their designs that resonate with me, due both to their unusual looks and their extreme utility.
The Civivi Hid has just underlined that notion for me.
